Sugar&lt;br /&gt;1/2 C. brown sugar&lt;br /&gt;1 t. cinnamon&lt;br /&gt;1 t. nutmeg&lt;br /&gt;1/2 C. butter&lt;br /&gt;6-7 sweet potatoes (peeled and sliced-thick slices)&lt;br /&gt;1 T. vanilla&lt;br /&gt;Brady or rum extract or orange zest whatever....&lt;br /&gt;&lt;br /&gt;In a small bowl, mix the sugar, cinnamon, nutmeg, and salt together.&lt;br /&gt;&lt;br /&gt;Melt butter in a large skillet over medium heat:  add sweet potatoes, and stir to coat.  Sprinkle sugar mixture over the sweet potatoes, and stir.  Add extract and or zest if you want.  Cover skillet and reduce heat to low.  Cook, stirring occasionally, for 1 hour. or until the sauce is dark and the potatoes are candied.  They should be tender, but a little hard around the edges.&lt;br /&gt;&lt;br /&gt;Sir in vanilla.&lt;br /&gt;&lt;br /&gt;Pour into 9x13 pan and cover with marshmallows and put in oven at 350 degrees until lightly brown.  Or if you watch really closely you can put it under the broiler. Cool and discard vegetables.  Chop up the meat getting most of the meat off the neck bones and cutting away all gristle from the gizzard.  This can be done a day ahead.  You can also add flour and more broth and make a thick gravy ahead.  You want about 1/2 C. flour for 2 cups of liquid.  When the turkey is done you add the drippings from the pan less some of the fat.  If the turkey was brined omit all salt until the drippings are added. Water&lt;br /&gt;1# dry black beans,( about 2 C.)&lt;br /&gt;1 # Ham hock or shanks (2# and omit sausage)&lt;br /&gt;1 Bay leaf&lt;br /&gt;¼ t. cayenne&lt;br /&gt;1/3 C. sherry&lt;br /&gt;1T. red wine vinegar&lt;br /&gt;1 t. Kosher or sea salt&lt;br /&gt;&lt;br /&gt;Sauté sausage, onions, peppers adding garlic in the last min. Add Oregano, cumin, and coriander and sauté 1-2 minutes more. Water&lt;br /&gt;2 t. Salt&lt;br /&gt;2 ½ T. Butter&lt;br /&gt;2 C. Carrots, chopped&lt;br /&gt;1 ½ C. Onion, chopped&lt;br /&gt;1 ½ C. Sweet potatoes or yams, chopped&lt;br /&gt;1 C. Celery, chopped&lt;br /&gt;¾ t. Marjoram&lt;br /&gt;1 t. Basil&lt;br /&gt;¼ t. White pepper&lt;br /&gt;¼ t. Thyme&lt;br /&gt;½ t. Ground cumin&lt;br /&gt;3 cloves garlic, minced&lt;br /&gt;2 Ham hocks&lt;br /&gt;&lt;br /&gt;Sauté vegetables in butter approx. 10 min. Add herbs and cook another 5-10 minutes. Add split peas, water, and ham hocks and cook on high pressure for 45 min. Remove the ham hocks and while they cool blend the soup with hand held blender and add another 1 quart of water and stir. Melt 2T. butter and add chopped onion. Saute` onions until slightly yellow and clear and add flour, mustard, salt, and pepper to taste. Add 1-1/2C. of cheese. Drain macaroni and add to cheese mixture and pour into 9x13 pan and top with the rest of the cheese. Toss bread crumbs with remaining 2 T. of butter and sprinkle over the cheese. Heat oil in med. Skillet. Add&lt;br /&gt;Onion and garlic; saute` until softened, about 5 min. Set aside to cool while&lt;br /&gt;preparing remaining ingredients. Mix eggs with thyme, salt, pepper, mustard, Worcestershire sauce, pepper sauce, and yogurt, or whole milk. Add egg mixture to meat in large bowl along with crackers, parsley, and cooked onion and garlic, Mix with fork until evenly blended and meat mixture does not stick to bowl. (If mixture sticks, add additional milk or yogurt, a couple T. at a time until mix no longer sticks.) Turn meat mixture into meat loat pan with perforated bottom, fitted with drip pan or form on broiling pan into a loaf shape. It using a perforated loaf pan, use a fork to pull the mixture away from the pan sides. (so glaze can go down sides of pan. Brush with ¼ t. glaze. Bake until glaze is set, about 45 min. Top with another ¼ of glaze; continue to bake until second coat has set and loaf registers 160 degrees, about 15 min. longer. Cool at least 20 min. Vegetable oil&lt;br /&gt;3/4 C. flour (sorry, whole wheat doesn't work for me here)&lt;br /&gt;&lt;br /&gt;I mix all this in a blender for 1 min.  , scrape down sides, and blend 1 more minute. Over mixing makes these tough.  I spray the griddle and cook 1-2 min on each side. And all who read this hopefully know that when I say flour I always use whole wheat pastry flour.  It's ground from soft white wheat and always makes the cookies a little healthier. Butter&lt;br /&gt;2 t. Cinnamon&lt;br /&gt;2 T. Molasses&lt;br /&gt;2 Eggs&lt;br /&gt;1 1/2 t. Baking soda&lt;br /&gt;1 C. Raisins&lt;br /&gt;2 t. Salt&lt;br /&gt;2 t. Vanilla&lt;br /&gt;2 C. Sugar&lt;br /&gt;2 C. Rolled oats&lt;br /&gt;2 C. Flour&lt;br /&gt;&lt;br /&gt;Cream, mix drop on parchment covered cookie sheets or use 'silpat'- typesheets.  These cookies are moist and chewy and hard to get off cookie sheet.  Remove from oven when still puffy and let cool some on the sheet.  They will ball up if you try and remove them too soon.  I just greased the pans for years and as this is my husbands favorite cookie put up with the mess they caused when trying to get them off the cookie sheet. As I mentioned, I originally wrote them up in Word in two columns and when I transferred them they took out the 2nd column.   A few days ago when I used one of the recipes to make something I realized all the ingredients were there, but the order was all messed up.  Each day I will try to fix another..where does the time go.  I will add a few more recipes everyday or so too.  Thanks for all the encouragement.  Have fun cooking.  I will also add some times for the automatic pressure cooker to some of the recipes as quite a few people had bought them. Cut into chicken into or thin slices or small cubes.&lt;br /&gt;Cook noodles and drain. Pour noodles into bowl and season with the 1 t. salt, melted butter, Parmesan cheese, and 1 C. of sauce (below)&lt;br /&gt;Saute` mushrooms in the 2 T. butter for 5 min. Butter, softened&lt;br /&gt;2 C. powdered sugar&lt;br /&gt;1 C Peanut butter&lt;br /&gt;5 T. heavy whipping cream (if &lt;span class="blsp-spelling-error" id="SPELLING_ERROR_0"&gt;useing&lt;/span&gt; milk use only 3-4T.)&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Cream together 1C. butter, 1 C. Flour&lt;br /&gt;1 C. Sliced celery&lt;br /&gt;1 ½ t. Salt, divided&lt;br /&gt;1 t. Dry thyme or fines herbes&lt;br /&gt;½ t. Pepper&lt;br /&gt;12 oz. Baby carrots (I slice them)&lt;br /&gt;8 Skinless chicken thighs&lt;br /&gt;½ C. White wine&lt;br /&gt;2-3 Sprigs fresh parsley&lt;br /&gt;2 T. Butter 1 Bay leaf&lt;br /&gt;1 ½ C. Chopped onion Dumplings (recipe follows)&lt;br /&gt;2 ½ C. Chicken broth/stock&lt;br /&gt;½ C. Heavy cream&lt;br /&gt;&lt;br /&gt;Combine flour, ½ t. salt and pepper. Dust chicken lightly with seasoned flour. Place half the butter in cooking pot. When better is melted and bubbly, add 4 chicken thighs to the cooking pot. Cook for 3-4 min. on each side until brown. Transfer to a platter and repeat with remaining chicken. Saute` onions, celery and thyme. Cook, stirring, until onions are translucent. Stir in carrots, chicken stock/broth and wine. Return browned chicken and any accumulated juices to the cooking pot. Lay fresh parsley over the top and tuck in bay leaf. Cover and cook until the chicken is very tender. This time depends on where you cook this. In a heavy Dutch oven it might be done in 1 hour on medium heat. I prepare it in a Automatic pressure cooker. Make up the Dumplings a little before chicken is done. Add Heavy cream to chicken and drop the dumplings on top of bubbling chicken. It can burn on the bottom now so be careful. It can be bubbling slightly and you should be OK. Cover with a lid and cook for 10 -15 min, until dumplings are puffed and cooked through.&lt;br /&gt;&lt;br /&gt;Dumplings&lt;br /&gt;&lt;br /&gt;2 C. Flour&lt;br /&gt;5 T. butter&lt;br /&gt;1 T. baking powder&lt;br /&gt;1 Lrg. Egg, lightly beaten&lt;br /&gt;½ t. salt&lt;br /&gt;¾ C. Buttermilk&lt;br /&gt;&lt;br /&gt;Placer flour, baking powder, and salt in medium bowl; stir to combine. Use a pastry blender or 2 forks to cut in butter until mixture resembles a coarse meal. (This may also be done in a food processor lilted with the metal chopping blade.) Stir in egg and buttermilk, and mix until the dough just comes together. Lightly coat an 8-inch square cake pan with vegetable oil spray. Whisk ½ c. of the sugar and ¼ C. of the cocoa in a small bowl. (used for the last ingredient to be sprinkled on top) Whisk the flour, the remaining ½ C. sugar, remaining ¼ C. cocoa, baking powder, and salt together in a large bowl. Chicken broth&lt;br /&gt;1# Cannellini or white beans (2 ¼ C.)&lt;br /&gt;1 Parmesan rind (optional)&lt;br /&gt;2 Bay leaves&lt;br /&gt;½ t. Red pepper flakes&lt;br /&gt;1 Sprig fresh rosemary&lt;br /&gt;Ground black pepper&lt;br /&gt;Grated Parmesan cheese (for serving)&lt;br /&gt;&lt;br /&gt;Heat the oil until shimmering but not smoking. Brown chicken on all sides and sprinkle with all the ingredients&lt;br /&gt;except mushrooms and spaghetti sauce. Cover and simmer about 30 min. adding more&lt;br /&gt;tomato juice if necessary. When it is tender, pour over it the cupful of sauteed&lt;br /&gt;mushrooms. Cover again and continue to cook for about 5 min. Butter&lt;br /&gt;2 T. drained capers&lt;br /&gt;2 T. finely chopped parsley&lt;br /&gt;Juice from ½ lemon&lt;br /&gt;&lt;br /&gt;&lt;br /&gt;Mix flour and cheese in pie plate. Dip fish in egg white mixed with the water and then in the flour-cheese mixture. Fry in the oil or butter until lightly brown (don’t over cook). Remove the fish and set aside. And cook in skillet on medium in 2 T. oil or butter 5 minutes on each side. Remove the chops from pan and reserve in warm oven. Add onions to the skillet and cook until browned, about 7 minutes. Add the shallots and garlic and cook for an additional minute. Pour red wine into pan and bring to a boil. Turn the heat down to a simmer, and cook until wine has reduced by half, about 3-4 minutes. Pound chicken to ¼ “. Dredge in flour. Heat oil in large skillet and add garlic for 1 minute (don’t burn). Add chicken and cook for 6 minutes or until done. Turning once. Remove to serving platter and keep warm. In same skillet add wine and bouillon, pepper and parsley. Cook and stir until mixture thickens and begins to boil. Spoon over chicken.&lt;br /&gt;Variations: Brown sliced onion before adding the garlic or mushrooms or add capers right after the garlic. Milk&lt;br /&gt;1 C. Grated Monterey Jack cheese&lt;br /&gt;Sliced onions &amp;amp; olives&lt;br /&gt;&lt;br /&gt;Preheat oven at 375 degrees. Sauté onion in butter. Add chicken, chilies and cream cheese and salt. Heat tortillas in the microwave. Spoon about 1/3 C. filling and roll and put in 9x13 baking dish (can be frozen at this point). When ready to cook moisten with milk. Sprinkle with cheese and bake 20 min. Cover with tin foil that has been sprayed with cooking oil. If you use pecans add them after everything else is mixed and only pulse until they are coarsely chopped. You can mix by hand, but will have to chop nuts.&lt;br /&gt;Preheat the oven to 350 degrees F. Butter the bottom and sides of a 9-by-13 glass baking dish.&lt;br /&gt;To make the fruit filling toss the apple slices with lemon juice. Add the sugar, flour and cinnamon and stir to combine. Add the brandy and butter cubes and toss until combined. Gently toss in the raspberries. (Be sure if frozen and thawed that you drain any liquid) Evenly spread the apple mixture in the prepared pan. Crumble the topping evenly over the filling.&lt;br /&gt;Bake the crisp for 40 min. or until the fruit is bubbling and the top is browned. Serve warm.&lt;br /&gt;About 8 servings. I serve in glass bowls, as this is so pretty.&lt;br /&gt;&lt;br /&gt;Crème Anglaise&lt;br /&gt;&lt;br /&gt;2 Cups whole milk (I’ve used vanilla soy milk and it tastes great too)&lt;br /&gt;¼ Cup granulated sugar&lt;br /&gt;1 vanilla bean, scraped ( I boil for a minute and then split with a knife on wax paper and take a sharp knife and scrape the seeds out)&lt;br /&gt;4 large egg yolks&lt;br /&gt;¾ teaspoon. Rum flavoring&lt;br /&gt;&lt;br /&gt;In a 2-quart heavy saucepan bring 2 cups of the milk 2 Tablespoons of the sugar, and the scraped vanilla bean to boil over medium heat.
