Oatmeal Peanut Butter Cookie Sandwiches

Oatmeal Peanut Butter Cookie Sandwiches

1 C. Butter
1 C. Peanut Butter
1 C. Sugar
1 C. Brown sugar
2 t. vanilla
2 Eggs
2 ½ C. Flour
1 t. Baking soda
1/2 t. Baking powder
1 t. Salt
2 C. Quick cooking oats

Filling
6 T. Butter, softened
2 C. powdered sugar
1 C Peanut butter
5 T. heavy whipping cream (if useing milk use only 3-4T.)


Cream together 1C. butter, 1 C. Peanut butter, sugars and vanilla. Add eggs and beat well. Add flour, baking soda, baking powder, and salt. Mix. Add oatmeal and mix again. Drop by very small teaspoons or make small balls onto greased cookie sheet and press with moistened fork to ¼ inch. Bake at 350 degrees for 8-10 minutes.
To make filling: Cream remaining butter with the powdered sugar and remaining peanut butter and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.
