Honey Nut Balls

1/2 C. Butter
1/4 t. salt
1 C. Flour

2 T. Honey

1 C. nuts
1 t. vanilla

Mix, form into balls and bake at 300 degress for 15-20 minutes,Until just getting brown. While hot, either roll in powdered sugar or wait until cool and dip in mixture of powdered sugar and water (to make a slightly runny paste (frosting) and then in Christmas or other toppings.


Coconut Cookies

3 1/2 C flour
2 C. Sugar
2 C. Butter
1 T. Baking Powder
1 t. Baking soda
1 t. vanilla
1 C. flaked coconut

Mix and make into refrigerator logs. Roll in colored sugar in wax paper. Chill 2 hrs and cut 1/4 inch slices. Bake 350 degrees for 8-10 minutes. Don't let them get brown.
Spritz Cookies
for cookie press

1 large Egg
1 T. heavy cream
1 t. Vanilla
1 C. Butter- room temp.
2/3 C. Sugar
1/4 t. Salt
2 C. Flour

Cream butter, salt, and sugar until light and fluffy. Add wet ingredients. Add flour. Form with cookie press and bake 8-10 minutes (don't let them get brown) at 375 degrees.

Sugar Cookies


Sugar Cookies

1 1/3 C. Butter
1 ½ C. Sugar
1 t. Vanilla
8 T. Milk
4 C. Flour
3 t. Baking Powder
½ Salt
2 Eggs
Cream and divide in 2. Chill 1 hour. Roll to ½ Inch. Bake at 325 degrees for 6-8 min.

Snickerdoodles

1 C. Butter
1 1/2 C. Sugar
2 Eggs
2 3/4 C.Flour
2 t. Cream of tartar
1 t. Soda
1/4 Salt

2 T. Sugar
2 t. Cinnamon

Cream butter and sugar and add eggs. Add rest of dry ingredients down to the salt. Mix. Then mix 2 T. of sugar and the 2 t. of cinnamon together in a pie plate. Roll batter into balls and roll in cinnamon and sugar and bake at 400 degrees for 8-10 min.

Oatmeal Molasses Cookies

1 C. Butter
2 t. Cinnamon
2 T. Molasses
2 Eggs
1 1/2 t. Baking soda
1 C. Raisins
2 t. Salt
2 t. Vanilla
2 C. Sugar
2 C. Rolled oats
2 C. Flour

Cream, mix drop on parchment covered cookie sheets or use 'silpat'- typesheets. These cookies are moist and chewy and hard to get off cookie sheet. Remove from oven when still puffy and let cool some on the sheet. They will ball up if you try and remove them too soon. I just greased the pans for years and as this is my husbands favorite cookie put up with the mess they caused when trying to get them off the cookie sheet. Parchment paper and silpat type sheets have made these cookies much easier.

Double Gingered Cookies

3/4 C. Butter
1 C. Brown sugar
1 Egg
1/4 C. Molasses
2 t. Baking soda
1 t. Cinnamon
1 t. Ground ginger
1/2 t. Ground cloves
1/4 t. Salt
6 Oz. Chopped candied ginger
2 1/4 C. Flour

Cream, Mix roll in balls or drop from 1 T. cookie scooper and roll in granulated sugar. Bake 8 min. st 350 degrees.

Almond Bars

1C. Butter
2C. Brown sugar
2 C. Flour
2 t. Vanilla
1/2 t. Almond extract
2 Eggs
2 t. Baking Powder
1/2 t. Salt
1/2 C. Chopped nuts (optional)

Mix all ingredients and spread in greased 9x13" pan. Bake in 375 degree oven for 25-30 min. (right after the center falls...You'll see it all puffs up and then falls a little)

Monster Cookies

Monster Cookies

2 C. Butter
2 C. Sugar
2 C. Brown Sugar
4 Eggs
2 t. Vanilla
2 t. Baking Soda
2 t. Baking Powder
2 C. Rice Crispies
2 C. Oatmeal
4 C. Flour
1 C. Shredded coconut
1 Lrg. pkg. Chocolate chips

Mix all ingredients in order given. Drop by teaspoons and bake for 8-10 min at 350 degrees.

Oatmeal Peanut Butter Cookie Sandwiches

Oatmeal Peanut Butter Cookie Sandwiches

1 C. Butter
1 C. Peanut Butter
1 C. Sugar
1 C. Brown sugar
2 t. vanilla
2 Eggs
2 ½ C. Flour
1 t. Baking soda
1/2 t. Baking powder
1 t. Salt
2 C. Quick cooking oats

Filling
6 T. Butter, softened
2 C. powdered sugar
1 C Peanut butter
5 T. heavy whipping cream (if useing milk use only 3-4T.)


Cream together 1C. butter, 1 C. Peanut butter, sugars and vanilla. Add eggs and beat well. Add flour, baking soda, baking powder, and salt. Mix. Add oatmeal and mix again. Drop by very small teaspoons or make small balls onto greased cookie sheet and press with moistened fork to ¼ inch. Bake at 350 degrees for 8-10 minutes.
To make filling: Cream remaining butter with the powdered sugar and remaining peanut butter and the cream. Spread filling onto half of the cooled cookies, then top with the other half to form sandwiches.

Chewy Oatmeal Cookies

Chewy Oatmeal Cookies

1 Cup butter
2 teaspoons salt
2 teaspoons cinnamon
2 teaspoons vanilla
2 Tablespoons molasses
2 cups sugar
2 eggs
2 cups flour
1 ½ teaspoon baking soda
2 cups rolled oats
1 Cup raisins

Mix as cookies and bake 8 min. at 350 degrees. Don’t over bake and let cool slightly on the cookie sheet or they will not hold their shape when you remove them. Don’t let them completely cool or they will stick too much.
