1 T. Sugar
3 Eggs
1 C. Milk
1/2 t. Salt
2 T. Vegetable oil
3/4 C. flour (sorry, whole wheat doesn't work for me here)
I mix all this in a blender for 1 min. , scrape down sides, and blend 1 more minute. Over mixing makes these tough. I spray the griddle and cook 1-2 min on each side. I use about 1/2 cup of batter per pancake.
Cheese Filling
2 C. well drained small curd cottage cheese
1 Egg yolk
2 T. Sugar
1 T. Lemon juice or more to taste
In small bowl combine the cheese, egg yolk, sugar, and lemon juice until very well blended.

Whole Wheat Pancakes
Whole Wheat Pancakes (makes about 8-10 pancakes)
1 C. White wheat flour
1 C. Buttermilk (or mixture of yogurt, sour cream & milk)
1 t. Rumford baking powder
1 t. Baking soda
1 egg
½ t. Salt
2 T. melted butter or oil
1 T. Sugar
½ t. Vanilla extract
Mix dry ingredients. Make well in middle of dry ingredients and add wet ingredients and mix just until incorporated (don’t over mix). Cook on griddle.
