Buttermilk Cheddar Biscuits

2 C. flour
1 Tablespoon Baking Powder
1/2 teaspoon baking soda
1 teaspoon salt
1 1/2 sticks cold unsalted butter, diced
1/2 C. cold buttermilk
1 cold extra-large egg
1 C. grated extra-sharp cheddar cheese mixed with a tablespoon of flour
extra melted butter

Preheat the oven to 425 degrees.  mix flour, baking powder, baking soda, and salt in mixer fitted with the paddle attachment.  With mixer on low, add the better and mix until the butter is the size of peas.  You can use a food processor, but be careful not to over mix.
Combine the buttermilk and egg in a small bowl and beat lightly with a fork.  With mixer still on low, quickly and buttermilk to flour mixture and mix only until moistened. Add cheese.  Mix only until just combined.  Don't over mix.
Spray cookie sheet and spray 1/4 Cup measuring cup.  By hand push some dough into cup..fill but don't pack.  Then shake cup into your hand and then place biscuit on cookie sheet.  They'll be about an inch high or so.  Place on cookie sheet not touching.  The crags and irregular top will make crispy nobby tops on the biscuits.  Bake 20-25 minutes at 425 degrees.  When done brush with the melted butter and transfer the biscuits to cooling racks to keep bottoms from getting soggy.  Enjoy!

Lil's Dinner Rolls

1 C. Scalded milk
1/2 C Butter
1/2 C. Sugar
1 t. salt

Pour heated milk over butter, sugar, salt and let cool slightly.

Add 3 tempered eggs.

Make yeast mixture: 2Pkg or 2 T. yeast
1/2 t. sugar
1/2 C. warm water ( if this doesn't start to foam within one minute, , the yeast is bad)

Add yeast to above mixture and add 4 C. flour (2 C. at a time)
Bake 10-15 min at 400 degrees.

Zucchini Bread

Zucchini Bread

3 eggs, well beaten
1 t. Vanilla
2 C. Sugar
3 C. Flour
1 C. oil
3 t. Cinnamon
2 C. Grated zucchini
¾ C. chopped nuts (optional)
1 t. each of salt, baking soda & baking powder

Scoop out the seeds of the zucchini if using really large vegetables before grating. Mix eggs until fluffy; add sugar, vanilla and oil, blend well. Stir in grated zucchini. Blend in dry ingredients. Fold in nuts. Turn into 2 greased 9x5 bread pans or 3 smaller ones. Bake @350 degrees for 1 hour or until it tests done.

Pumpkin Bread

Pumpkin Bread

2 ¼ C. Brown sugar
1 ½ t. Nutmeg
2 ¼ C. Sugar
#2 ½ Can Pumpkin
1 ½ C. Oil
5 ½ C. flour
6 eggs
3 t. Baking Soda
1 ½ t. Baking powder
2 ¼ t. Salt
1 ½ t. Cloves
2 ¼ t. Cinnamon

Mix in order. Bake at 300 degrees for 1 hour and 15 minutes in greased bread pans. Makes 3 lrg. loafs

Baking Powder Biscuits

Baking Powder Biscuits

2 C. Flour
½ t. Salt
4 t. Baking powder
1 t. Cream of tartar
1 T. Sugar
1/2 C. Butter or shortening
2/3 C. Milk


Mix dry ingredients. Then cut in ½ C. butter or shortening. Add 2/3 C. Milk and blend just until it forms ball. You should see the different ingredients in striations in ball. Blending too much makes it tough. It using a food processor stop as soon as a ball is formed. Pat or roll to ½ thick and cut placing biscuits touching each other in sprayed 9x13 pan or cake pan …..Makes 12-14

Philippine Fruit Bread

Philippine Fruit Bread

6 C. sliced apples
2 Eggs
3 C. Whole Wheat flour
¾ C Oil
3 C. Brown sugar
3 t. Cinnamon
3 t. Vanilla
1 C. Nuts
3 t. Baking soda

Mix all together. It’s thick. Line bread pans with foil and spray foil with cooking oil spray. Bake 1 ½ hours at 325 degrees. Check for donness. It tends to get dark. Watch. Tent with foil of necessary.

Banana Bread

Banana Bread

1 C Sugar
2 C. Flour
½ C. Butter
1 t. Baking Soda
2 Eggs
½ t. Salt
3 Mashed Bananas
1 C. Nuts (optional)
2 T. Butter milk (or ½ milk & ½ vinegar)

Mix and put in greased bread pan. Bake at 350 degrees for 45 min.
